The Barbero crumbly nougat with pistachios is a unique and artisanal product, still worked according to the ancient recipe of Asti nougat which dates back to 1883. No edible gelatine is used, but only fresh egg white which gives the product great friability and which does not alter the taste of the nougat. Barbero nougat also contains a very high percentage of pistachios (51%). After cooking, which lasts about 2 hours, the nougat is crushed by hand inside special wooden molds. The product is then left to cool until the following day on marble tables and is collected to be packaged.
