Croxetti, also known as “corzetti” or “corsetti”, is a kind of pasta typical of Ligurian cuisine. The ones we propose belong to the so-called printed variety, because the decoration of these small circles of pasta in the form of a medallion is obtained by means of a wooden mold that decorates the dough so as to “prepare” it to better accommodate the sauce. In some artisan shops in the historic center of Genoa there are still people who make these molds so useful for preparing this typical pasta. The printed corzetti (“cruxetti”) date back to the Renaissance period. The noble families of the time seem to order their cooks to make a type of pasta that bare its own coat of arms, all with the purpose of reminding the guests of the importance of their family and to reaffirm their dominion over the territory. They are excellent with walnut sauce, pine nuts sauce, with mushroom sauce and also with pesto.
