Step 1
Preheat your oven to 180°C. Spread the rice over a baking tray & mix in the chilli oil, sesame oil & soy sauce. Bake for 30-40 minutes or until crispy.
Step 2
Prepare the salad ingredients by slicing the cucumber, mango, avocado, red onion, mint & coriander. Add to a bowl along with the edamame beans.
Step 3
Prepare the dressing by adding all the ingredients to a jar & mix well.
Step 4
Once the rice is crispy, add into the salad along with the dressing & mix well.
