Ape Nera Sicula Amodeo Carlo’s Chestnut Honey is produced in the Messina area, in mid-mountain areas, in June and July. It has a strong and penetrating aroma, with a flavor similar to the smell, pungent at first, then more or less bitter depending on origin, and is rich in mineral salts. The color varies from amber to almost black, depending on the areas of production. Ideal when paired with unripened or medium-ripened cheeses.
Like all the Carlo Amodeo Company’s range of honeys, in order for Chestnut Honey to retain all its properties longer, it is extracted from the honeycombs taken from the flowering areas every 7 days to avoid oxidation at high temperatures, immediately centrifuged, decanted, potted and placed in cold storage at 4 degrees.
Apicoltura Carlo Amodeo boasts the production of the finest and most typical honeys in Sicily, which comes from the native Sicilian bee, the Black Bee (Apis mellifera siciliana), which has also become a Slow Food Presidium. Defined as black because of its very dark color, the Sicilian bee is distinguished by some important peculiarities such as productivity and earliness. In addition, the Sicula bee has very low honey consumption and possesses a strong ability to develop from even small nuclei.
