Step 1
Preheat oven to 200°C. Cut broccoli florets from the stem, cutting any larger ones in half lengthwise, and place in a bowl.
Step 2
Add olive oil, salt, pepper and chilli flakes to the bowl, and toss to coat well. Add a little more olive oil if needed.
Step 3
Line a large flat baking tray with baking paper and place the seasoned broccoli in a single layer, leaving a little space between each piece.
Step 4
Roast for 15 minutes, or until tender and starting to char on the edges. Meanwhile, grate the parmesan on the fine side of a box grater and set aside. You should have about 1 cup of grated parmesan.
Step 5
Remove broccoli from the oven and sprinkle each floret generously with the grated parmesan. Place back in the oven for about 10-15 minutes, until the cheese is melted and golden.
Step 6
Remove tray from oven and set aside to cool completely. Transfer to a plate and serve.
