Amodeo Carlo’s Sicilian Black Bee Carob honey is a rare honey that is difficult to produce because it is a winter honey. It is produced in Sicily in the Ragusa area during the months of October and November. It is characterised by a very particular perfume reminiscent of the fruit. The flavour is also very particular and intoxicating, its almost creamy consistency makes it excellent to enjoy by melting it slowly in the mouth. In its liquid state it has a very dark colour that becomes lighter, almost hazelnut, when it crystallises. Like the whole range of Carlo Amodeo company honeys, in order for Carob honey to preserve all its properties for longer, it is extracted from the honeycombs taken from the flowering areas every 7 days to avoid oxidation at high temperatures, immediately centrifuged, decanted, potted and placed in a cold store at 4 degrees.

Apicoltura Carlo Amodeo boasts a production of the finest and most typical Sicilian honeys that originates from the native Sicilian bee, the Black Bee (Apis mellifera siciliana), which has also become a Slow Food Presidium. Defined as black because of its dark colour, the Sicilian bee is distinguished by some important peculiarities such as productivity and earliness. Moreover, the Sicilian bee has a very low honey consumption and a strong capacity to develop from small nuclei.
