Busiate made with Tumminia flour are a unique product, brings to the typical Sicilian spiral-shaped pasta the added value of being produced with this special flour, a very ancient wheat derived from typical durum wheat of Trapani, always considered as a true excellence in food that today is rediscovered and enhanced  thanks to producers like Nino Centonze. The processing of this type of flour is generally carried out with stone grinding, without complex industrial techniques; this allows it to be much less refined than 0 or 00 flours. It also has a low gluten index which makes it lighter, easier to digest and assimilate.
