Busiate is a typical pasta of Sicilian gastronomic tradition, especially of the area of Trapani. It has ancient origins and its original spiral shape comes from the traditional handwork made with the “Busa”, that is the stem of a typical plant of the Mediterranean region. Even today the production of this pasta follows artisan processes, with slow drying and bronze drawing. The dough is made is exclusively with durum wheat from Sicily. Busiate by Centonze is a pasta that enhances the flavor of the wheat itself and that maintains its specific characteristics unchanged. Perfect to season with fish sauces or with a simple tomato and ricotta sauce which, thanks to the spiral shape, will give pasta a full-bodied taste.
