Step 1
In a sealable container add oats, apple juice, currants and cinnamon. Mix well to combine and put in the fridge overnight.
Step 2
To prepare the pepitas, toast in a small frypan over medium heat for 2-3 minutes, shaking the pan often, until they turn golden brown. Turn off the heat and allow to cool completely before transferring to a jar or sealed container.
The Next Morning
Step 3
Grate the apple on the coarse side of a box grater. Gently mix the grated apple and yoghurt through the soaked oats. Serve in bowls topped with the toasted pepitas and extra sliced fruit if you’d like.
