The Organic Extra Virgin Olive Oil Monocultivar Ghiacciola Claterna is the spearhead of the olive oil production of Palazzo di Varignana. The Ghiacciola olive variety, together with the Nostrana di Brisighella, is one of the oldest and most representative native cultivars of Emilia Romagna region. It is an intense fruity olive oil. The processing of the olives, harvested by hand in early October, takes place in the mill within 12 hours from harvesting.

It has an enveloping aroma with fresh herbaceous hints.

Taste:

Taste denotes a complexity ranging from aromatic herbs to green citrus and green olive leaves; the bitterness is well dosed, it closes with a decisive spiciness of considerable persistence.

Culinary use:
Recommended raw, particularly suitable for enhancing dishes based on meat carpaccio and fish tartare, boiled legumes and pinzimonio.
