Obtained from olives of the Cerasuola variety, grown in the lands around Castelvetrano, Partanna and Campobello di Mazara, it scrupulously follows the criteria of organic farming, guaranteeing respect for the environment and local biodiversity. Harvesting, strictly manual, takes place between October and November and the olives are pressed within 12 hours of picking at the Premiati Oleifici Barbera oil mill, using a pitting process that allows the oil to be extracted only from the olive pulp, guaranteeing a top quality product.
