Ursini’s Sugo alla Gricia represents the white version of the famous Amatriciana and is, in fact, the original recipe prior to the introduction of tomatoes to Italy in the 16th century. This dish consists of high quality seasoned guanciale, excellent pecorino romano cheese, white onion and a selection of aromatic spices, all harmonized by superior extra virgin olive oil.
