The Borettane Onions in Extra Virgin Olive Oil from Frantoio di Sant’Agata d’Oneglia are harvested between the end of July and November and preserved in olive oil. They are characterized by a sweeter and more delicate taste than common onions and for this reason they can be eaten raw as crunchy bites for antipasti. Sweet and Sour Borettane onions are a typical recipe of Emilia Romagna, where these onions are cooked in a pan with balsamic vinegar.
