Lampascioni (Tassel hyacinth bulbs) are one of the oldest and most characteristic vegetables of Salento and other parts of Southern Italy. It is a plant similar to a spring onion but with a characteristic bitter aftertaste. It is the perfect side dish for savoury meats, but they are also used in omelettes. The preservation in oil of Lampascioni is very useful because it allows to appreciate its taste and fragrance throughout the year.
