Trofie is an Italian type of Pasta trypical of Liguria culinary tradition. It is prepared with a mixture of durum wheat flour and water. Trofie are distinguished by a thin and irregular shape, thicker in the middle and thiner at the top. They are excellent with walnut sauce or black squid ink, but the traditional recipe, enormously more widespread, wants trofie to be seasoned with the classic Ligurian pesto, prepared with the Genoese DOP basil.
