Scialatielli al Bronzo from Fabbrica della Pasta di Gragnano are a typical pasta shape of Campania cuisine, in particular of Amalfi where they were created by chef Enrico Cosentino in 1978. Their name is presumed to derive from two words of the Neapolitan language “scialare ” (enjoy) and “tiella” (pan). Those by Fabbrica della Pasta are Scialatielli certified as Pasta di Gragnano PGI, bronze drawn and dried for a long time and at low temperature. Try them in the recipe “alla Sorrentina” with fresh cherry tomatoes and mozzarella di bufala.
