Mezze Maniche Rigate Pasta Tirrena Frescobaldi is a high quality semi-wheat pasta made from ancient grains such as Senatore Cappelli, Khorasan and Evoldur. This artisan pasta, made in Tuscany, is famous for its high digestibility. Pasta Tirrena benefits from the best Tuscan terroir, thanks to fertile soils, a mild climate and the breezes of the Tyrrhenian Sea. These conditions, combined with the mastery of the Frescobaldi family, give the pasta an unmistakable character.
This durum wheat semolina pasta is unrefined, rich in fibre, polyphenols and vitamins, and is extremely digestible. The grains are grown on the Frescobaldi estates, milled at the Molino Borgioli in Calenzano and processed at the Pastificio Artigiano Fabbri in Strada in Chianti, following a centuries-old tradition.
The pasta is bronze-drawn and dried slowly at temperatures below 38°C for a period ranging from 3 to 6 days. This method gives the mezze maniche a characteristic hazelnut colour, an intense aroma of wheat, high digestibility and an extraordinary ability to absorb sauces, making them perfect for any recipe.
