Linguine al Nero di Seppia by Antico Pastificio Morelli differs from other flavoured pastas due to the presence of wheat germ, rich in vitamins and vegetable proteins. With their intense black colour, they go perfectly with all fish-based sauces.

The wheat germ is the heart of the wheat grain, rich in flavour and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but Pastificio Morelli, using artisanal techniques, reinserts the fresh wheat germ into the dough, obtaining a different kind of pasta, good even if dressed with just a drizzle of oil. During cooking, an intense aroma of wheat is released and the water is slightly tinged with green. It is recommended to season only with cheese and simple sauces to taste.
