The wheat germ is the heart of the wheat grain, rich in flavour and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but Pastificio Morelli, using artisanal techniques, reinserts the fresh wheat germ into the dough, resulting in a different kind of pasta, good even if dressed with just a drizzle of oil. During cooking, an intense aroma of wheat is released and the water is slightly tinged with green. It is recommended to season only with cheese and simple sauces to taste.
