Frescobaldi’s Paccheri Pasta Tirrena is a highly digestible, semi wholemeal pasta, made from ancient grains of the Senatore Cappelli, Khorasan and Evoldur varieties, grown and processed by hand in Tuscany. Pasta Tirrena was born in the best terroir for the cultivation of ancient grains, thanks to the combination of fertile soil, the mild climate of Tuscany and the breezes of the Tyrrhenian Sea. The characteristics of the land, combined with the experience of the Frescobaldi family, give this pasta a unique character.
It is an unrefined durum wheat semolina pasta, rich in fibre, polyphenols and vitamins, and extremely digestible. The grains are cultivated on the Frescobaldi estates, transported to the Molino Borgioli in Calenzano and then processed in the Pastificio Artigiano Fabbri in Strada in Chianti, according to a method handed down through generations.
The pasta is bronze drawn and dried slowly at temperatures below 38°C for a period of 3 to 6 days. This process gives it, in addition to its characteristic hazelnut colour and wheat scent, a high digestibility and an extraordinary ability to absorb sauces.
