Linguine Pasta Tirrena by Frescobaldi is an artisanal Pasta made in in Tuscany from ancient grains. Pasta Tirrena is the ultimate expression of Tuscany and comes from the best terroir for growing ancient grains, thanks to cool soils, mild climate and breezes from the Tyrrhenian Sea. All these features, combined with the knowledge of the Frescobaldi family, give this pasta a unique personality.

Pasta Tirrena is a semi-wholemeal Pasta rich in fibers, polyphenols and vitamins, with superior nutritional qualities and highly digestible. The varieties of grains that are used are: Senatore Cappelli, Khorasan and Evoldur. These are carefully grown on the Frescobaldi’s estates and transported to Molino Borgioli in Calenzano for milling. Then, the pasta making takes place at the Pastificio Fabbri artisanal factory in Strada in Chianti following a natural processing method that has been handed down for generations.

Here pasta is bronze drawn and then slowly dried from 3 days to max 6 days at temperatures below 38°C. This gives the pasta, in addition to its hazelnut color, high digestibility and an extraordinary ability to absorb seasonings.
