Caserecce Tirrena by Frescobaldi is a semi whole-meal pasta, made in Tuscany from ancient grain. Pasta Tirrena is the ultimate expression of Tuscany and comes from the best terroir for growing ancient grains, thanks to cool soils, mild climate and breezes from the Tyrrhenian Sea. All these features, combined with the knowledge of the Frescobaldi family, give this pasta a unique personality.
Pasta Tirrena is rich in fibers, polyphenols and vitamins, with superior nutritional qualities and high digestibility. The varieties of grains that are used are: Senatore Cappelli, Khorasan and Evoldur. These are carefully grown on the Frescobaldi’s estates and transported to Molino Borgioli in Calenzano for milling.
Then, the pasta making takes place at the Pastificio Fabbri artisanal factory in Strada in Chianti following a traditional and natural processing method that has been handed down for generations. Here pasta is bronze drawn and then slowly dried from 3 days to max 6 days at temperatures below 38°C. This gives the pasta, in addition to its hazelnut color, high digestibility and an extraordinary ability to absorb seasonings.
