Antico Pastificio Morelli’s Pici Dritti are a variation of the classic and more rustic Pici a Matassa. They are shaped like rough, full-bodied spaghetti with a micro-hole in the center that closes during cooking due to the large growth. The pasta reaches a diameter of 4.4 millimeters and cooks in only 11 minutes, about half the time it takes to cook Pici a matassa. They are made only with Tuscan durum wheat semolina, bronze drawn and dried at low temperature. They blend perfectly with all kinds of sauces during the final stir-fry stage thanks to the release of the starches.
