Antico Pastificio Morelli’s Tagliolini al Tartufo are characterized by the presence of wheat germ, rich in vitamins and vegetable proteins. Their intense aroma and taste make them perfect even with simple seasonings such as butter or extra virgin olive oil.

Wheat germ is the heart of the wheat kernel, rich in flavor and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but Pastificio Morelli, using artisanal techniques, reinserts the fresh wheat germ into the dough, resulting in a different kind of pasta, good even when dressed with just a drizzle of oil. During cooking, an intense wheat aroma is released and the water is tinged slightly green. It is recommended to season only with cheese and simple sauces to taste.
