Wheat germ is the heart of the wheat kernel, rich in flavor and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but Pastificio Morelli, using artisanal techniques, reinserts the fresh wheat germ into the dough, resulting in a different kind of pasta, good even when dressed with just a drizzle of oil.
