The Mafaldine di Gragnano PGI of the Fabbrica della Pasta is a long pasta format with an enriched shape on the sides, which allows them to hold the seasoning very well, adapting to important sauces made of meat or cheese. It is said that the Mafaldine were named in honor of Queen Mafalda of Savoy, and for this reason also called “queens”. The Mafaldine of the Fabbrica della Pasta are produced according to the dictates of the high family tradition, using the best coarse-grained semolina of first extraction kneaded with the water of the Monti Lattari spring. The bronze drawing and the long and gentle drying at low temperature help to create a unique and high quality product.
