Antico Pastificio Morelli’s Pici a matassa are a typical traditional Tuscan pasta, particularly from the Sienese tradition. They are made with durum wheat semolina, bronze-drawn and dried at low temperatures. In the skein version they are even more rustic, perfect for rediscovering the flavour of good artisan pasta. They are ideal with structured and rich sauces such as game ragùs, with porcini mushrooms and truffles or to make Pici all’Aglione typical of Tuscany. For optimal cooking we recommend cooking in plenty of boiling water and not stirring before 12 minutes in order to avoid breaking the thread. The total cooking time is 22 minutes.
