Amodeo Carlo’s Sicilian Black Bee Mandarin Honey is produced in the Palermo area during the months of April and May. It has a moderately intense aroma reminiscent of the flowers from which it is obtained, and its flavour is delicate, moderately aromatic and very fresh between floral and fruity. Its colour is straw yellow in its liquid state and when it crystallises it tends to become slightly lighter. Excellent when spread on bread and as a sweetener in coffee and herbal teas.
Like the entire range of Carlo Amodeo Company honeys, in order for Mandarin Honey to maintain all its properties for longer, it is extracted from the honeycombs taken from the flowering areas every 7 days to avoid oxidation at high temperatures, immediately centrifuged, decanted, potted and placed in cold storage at 4 degrees.
Azienda Carlo Amodeo’s beekeeping boasts a production of the finest and most typical Sicilian honeys, which originate from the native Sicilian bee, the Ape Nera (Apis mellifera siciliana). Defined as black because of its dark colour, the Sicilian bee is distinguished by some important peculiarities such as productivity and earliness. Moreover, the Sicula bee has a very low honey consumption and a strong capacity to develop from small nuclei.
