Amodeo Carlo’s Sicilian Black Bee Almond Honey in 250 g jar is a honey that is difficult to produce because it is produced in late winter, when the bees are forced to brave adverse weather conditions to collect this nectar. Produced in the Caltanissetta and Agrigento areas, it is a honey with a delicate yet intense fragrance reminiscent of the fruit itself. Its flavour is also delicate at first but as soon as it begins to melt in the mouth, one is pleasantly surprised by the strong bitterness it releases. Its colour is amber as soon as it is honeyed and tends to beige when it crystallises. Like the whole range of Carlo Amodeo honeys, in order for the Almond Honey to maintain all its properties for longer, it is extracted from the honeycombs taken from the flowering areas every 7 days to avoid oxidation at high temperatures, immediately centrifuged, decanted, potted and placed in cold storage at 4 degrees.

Apicoltura Carlo Amodeo boasts the production of some of Sicily’s finest and most typical honeys from the native Sicilian bee, the Black Bee (Apis mellifera siciliana), which has also become a Slow Food Presidium. Defined as black because of its dark colour, the Sicilian bee is distinguished by some important peculiarities such as productivity and earliness. Moreover, the Sicilian bee has a very low honey consumption and a strong capacity to develop from small nuclei.
