The crumbly nougat with Piedmont hazelnuts IGP Barbero is a unique and artisanal product, still worked according to the ancient recipe of Asti nougat which dates back to 1883 and which involves long cooking in steam boilers for approximately 7 hours. No edible jellies are used, but only fresh egg white which gives the product great friability and which does not alter the taste of the nougat. Barbero nougat also includes a very high percentage of Piedmont I.G.P. hazelnuts in its recipe. (51%) and scrupulously selected quality wildflower honey. After cooking, the nougat is extracted with wooden “oars” and crushed by hand inside special beech molds. The product is then left to cool until the following day on marble tables and is collected to be packaged.
