Chicken Cashew Nut Stir Fry 🥜
Everyone’s favourite Thai classic.

Step 1
Start by prepping your sauce. Mix 2 tbsp oyster sauce, 1 tsp dark soy sauce, 1 tbsp fish sauce, 3 tbsp Shaoxing wine, 1 tbsp honey, and a dash of water. Stir.
Step 2
Roast your cashews and set aside. Stir continuously for about 2-3 mins otherwise they’ll burn.
Step 3
Add sliced red chilli, sliced onion, minced garlic, a handful of Thai basil, and the white ends of the sliced shallots into a hot wok with sesame oil. Stir thoroughly for 3-5 mins.
Step 4
Add diced chicken thigh. Stir thoroughly for 2 mins.
Step 5
Add the sauce and the green ends of the sliced shallots. Stir thoroughly for 3 mins.
Step 6
Add the roasted cashews and mix with the heat off.
Step 7
Serve with rice, topped with more Thai basil and toasted sesame seeds.
